What kitchen knives do I need?

There are many different knives on the market, and each serve a different purpose. Most people will start their collection with a generic chefs knife, butter knives and steak knives, and expand to bread knives, paring knives, and fillet knives soon after. Some may even opt for a knife set.

If you’re looking for more specialised knives, such as one for meat carving, or one just for cheese, you’ll be happy to know that there are a whole range available for any need, such as santoku knives, vegetable knives, utility knives, cleavers, boning knives and sashimi knives.

What are the best kitchen knives?

Whether it’s a meat cleaver or chefs knife, a good kitchen knife has these five steel properties:
1. Resistance to rust
2. A sharp blade
3. Edge retention
4. Hardness
5. Is easy to sharpen

A knife handle is also an indicator of how good a kitchen knife is, and you’ll generally see knives with wooden, steel or plastic handles. Knives with wooden or steel handles may be more efficient than ones with a plastic grip.

How to clean kitchen knives

Knives require maintenance just like any other kitchen tool or appliance. Take good care of your kitchen knives and they can last you for decades.

As a general rule, never run kitchen knives through the dishwasher. The high heat and movement in the dishwasher will dull your knives much more quickly. Instead, soak them in warm, soapy water to break up grime, and then use a sponge or dishcloth to slowly and carefully wipe away any food stains.
